Dear author, may I ask if the PS5 version of Stardew Valley is only version 1.63? Will there be any difference because of this?

That is simply a patch number, it is 1.6.9, as were/are all platforms.
PS5 was missing some 1.6.9 features but that was simply because they were implemented right before the main release of 1.6.9, and consoles usually have a pretty long checking stage for updates, that does not in any way mean that they are on a patch prior to 1.6.9. They will receive this content soon in smaller subpatches.
