Xbox Please Help!

Every night, without fail, the game crashes right before our money is counted. I say "our" because this is a co-op game. We haven't had any issues prior to this, and we are both on the latest version of the game. We end up having to repeatedly replay the same day, and we can't find a fix for it. We have restarted our consoles, powered off our devices, closed the game and reopened it, and still this is an issue. We are in Year 3, Winter 6 or 7.

Have you tried playing in single player mode to rule out if it is a corrupt file or just the multiplayer save itself?

Also what day/year is it and how much gold do you have? Were any achievements unlocked that day or did anyone skillup?

Yes. I played through one singular day, just woke up and immediately went back to bed to see if it was an issue in single player, and it worked just fine. It is Year 3, Winter Day 7. And we have around 300,000 gold. No achievements were unlocked, and no one skilled up.
