I was wondering if I could run Stardew Valley with my pc since it‘s fairly old

Intel Core 2 Duo E6850 Dual-Core 3.0GHz 1333MHz
EVGA e-GeForce 8600 GT 256 MB
4 GB ram
70gb storage

That should work fine. I have Stardew Valley installed in a 2.5GHz Core 2 Duo Mac with 4GB 1066 RAM and a GeForce 9400M GPU. Your PC beats the specs of mine. Your only limitation may be if you're still running Windows 7. I've only used SDV in Win 10 (and Mac OS of course), using the GOG.com version but GOG's does claim Windows 7 compatibility. I assume Steam's version does as well.
