I'm looking for adult Stardew Valley multiplayers on Switch, too. My time zone is CET.
Usually I play around 13 EST (19 CET) on weekdays, perhaps that is too early for you? During the weekends we might find more suitable time slots, for example 16 EST (22 CET).
