I read that you can get golden walnuts from walnut plants. Where do you get walnut plants?

You can find Golden Walnuts by

picking them from walnut plants, digging dirt encircled in pebbles, digging sand encircled in starfish, digging a lighter square patch of dirt, killing monsters, fishing, mining, or breaking crates in the Volcano Dungeon on Ginger Island. Harvesting crops on the Ginger Island farm can also sometimes drop golden walnuts.

I understand how to get the golden walnuts, what I don't understand is where to find Walnut PLANTS

They are all over the island. There is one to the right in the jungle. I don't think there is a regular harvest though, just once.

The look like short palm trees with a golden walnut on top.

They're just on the island and "plants" refers to the ones that are resting on top of a plant on the map, not an actual crop.
