I recommend My Time at Portia, it focus more on crafting but it is similar to Stardew Valley.And Hokko Life on steam is basically a Animal Crossing for computer. Yonder : the Cloud Catcher Chronicles is an ok game and it seems they improved since I last played it, think of a mix between My Time at Portia and Breath of the Wild (in terms of world exploration)
A friend got me Littlewood and the gameplay loop and simple graphics got me hooked for a while. There's also Summer in Mara that I should get further, but it also seems to be good vibes and chill. tbh I got a bunch of games similar but I need to test: Alchemy Garden, Kynseed, Stranded Sails, Verdant Skies. A Good Life is something I should get back into too.
A long time ago I also compiled a list of free games along these lines.

Have you heard of Tinkertown . i got it gifted by a friend a few weeks ago and didnt get invested in it yet . just curious if you have heard of that game yet . i loved the graphics on it

The first Atelier Ryza game I think was a super chill fun game. It is an RPG with a story and battles, but regardless, it was really chill and fun to explore and gather materials for alchemy. I've been having a hard time getting sucked into the sequel, still need to finish it. But yeah, first game was relaxing, charming and pretty great.
Also, I had a ton of fun with ACNH, I've spent over 600 hours on it total and still on rare occasion get back into it. My first was New Leaf but it didn't hook me like New Horizons. I do think ACNH still could've used certain things from ACNL, but with the added outdoor decorating and tons of items and options, I had a lot of fun with it.
