Ooh, Jackpot is pretty rare, even during very lucky days and setup with double lucky rings, plus food+drink Luck buffs...

I posted this many moons ago (before v1.6+ came out):
This was on a Stardrop Luck day and +14 in Luck Buff modifiers (Stardew Expanded).
Even with that much Luck:
The Triple Diamonds (like the OP posted) took me 5 minutes to get.
The Triple Stardrops took me a little over 30 minutes -- then I called it quits and bought my Rarecrow.
The one Triple that I couldn't get within that time was Triple Cherries.
