I'm a steam user, but I want to change from the 1.6.8 version to the 1.6 version, is it possible?

you don't want that. previous versions had been unstable, with lots of issues. key among them, recipes being lost (not registered), stardrops not being counted (i got that one and was so nasty, that i started a new game altogether post 1.6.4), looted weapons suddenly having their "innate enchantments" changed (my holy blade got from +4 speed to +2) without you doing anything and various other inconveniences. you want the latest and the most stable version; trust me on that one

The only way to change it would be having a saved copy of that versions game files or downgrading through steam, though that isn't allowed discussion here and I won't elaborate.
Unless you need a specific bug or pre patch only present on an earlier version of the update, I would recommend taking HaleyRocks advice, the latest versions are far better than previous patches of the update
