You can clear out small objects you placed yourself with the pickaxe (like furnaces and empty chests). If you just want to clear out crops and debris you can bomb it for speed.
As for buildings head over to Robins and she can move those around for you.
If you are wanting to change from like Standard Farm to Beach Farm or Forest Farm etc. You will have to start a new game.

If you are talking about changing farm maps, it is possible... but not on Switch. Even when it is possible, it can glitch your save pretty easily, from what I've seen.
You'll have to start a new save if you want to play on a new/different map... but don't despair! See, sure, you've put 60 hours into this save, but that was 60 hours of learning. Now you can start a new map and apply what you've learned, you know?
