I found a truffle monster?

Hey, i came acrros this thing that looked like a walking truffle, and it hit me when i walked into it, so i killed it and it dropped 2 truffles, i can send some
screensshots, can somone explain

They're a new thing! I think they happen if you leave truffles uncollected overnight (possibly longer). Your truffle turns into a truffle crab monster.

This monster was added in update 1.6 and is very rare. Since you are playing on mobile, that could explain that you never had the opportunity to meet it before.
