Honestly the mobile -> pc for stardew is pretty easy. I originally started playing PC but only really got into the game when it came out on iOS and finally got back onto PC when covid hit.
I definitely missed a couple features that mobile had immediately (tap to move, save states, really accessible way to swap to previous day), but I adapted really quickly to the controls (though I had played stuff on PC so it was helped by basic familiarity with wasd+mouse). Once you're on PC you'll really find it nice for anything precise, be that loading machines, hitting stuff at diagonals, etc. that you really can't get on mobile, and mods if you're considering that.
Since mobile and PC are cross-compatible, one way you could try to stay hooked or just get over the immediate transition from mobile to PC would be to transfer your main save or one save you've been playing on mobile to PC. If you're like me the early game is the slowest part so if you skip that you'll probably get into the groove of playing pretty quickly.
