How do i get a potato now?

The traveling cart might have a potato or hashbrowns in stock.

The saloon might sell hashbrowns, and Krobus if you've unlocked him as a merchant.

If you have any seeds leftover, you can plant them in a garden pot or the greenhouse.

if you have ginger island unlocked, you can get the missing stock list for Pierre and then he’ll sell all seeds independent of the season.

otherwise, you’ll have to rely on luck and check the saloon, travelling cart or Krobus on Saturdays.

Mixed seeds grown indoors can produce veg from different seasons. You could try filling a portion of your greenhouse or a bunch of garden pots set indoors (farm cave counts) with mixed seeds and see if you get lucky. That way you don't have to wait for the night market in winter.
