I don't play enough on my ifone to be sure but you need to have your phone backed up to iCloud to retain your saves. Otherwise they will be deleted when you remove Stardew from your phone, many people have posted losing their saves here that way, it's very sad 
. That said, I have not tested whether an iCloud backup is good enough to back up your Stardew saves or how the restore process of those saves goes.
