At first I was looking just at fruit trees, where there's little point in planting anything but Peaches or Pomegranates, but TBH I kinda feel like we could make this a broader idea.
For me personally, while I'll sometimes plant a few sprinklers worth of less-used crops like Corn, there's little reason for me to ever actually kinda focus on them, you know? I was thinking, these crops could have extra perks to make them more appealing, even if not for straight profit.
For example, imagine if some crops only needed to be watered every other day?
Corn IRL doesn't need much water, as it has deep roots and going without water can actually be good for it as it makes it more resistant to wind. I know because I'm a farmer irl.
Tomatoes are another example of a lesser-used crop. IRL, tomatoes are one of the crops that are MOST worth growing in a garden, because homegrown tomatoes are so much better than the ones you get from the grocery store! So what if Tomatoes had a much higher chance of giving you gold or even iridum crops? That'd make them an interesting option as an unprocessed cash crop!
Amaranth is supposed to be really enjoyed by animals, but can't actually be used like that! What if you could feed it to your cows twice a week, giving a friendship bonus and replacing Hay for that day?
Apricots are part of fruit salads, but otherwise are pretty useless - but IRL apricots produce just LOADS of them, and they fall off the tree all the time and are loved by chickens. What if apricots would have a chance of producing more than 1 apricot per day as they get older, and if they have too many on the tree, they fall off and can be eaten by animals in lieu of hay?
Cherries would be nice if you could make a cherry pie. Who doesn't like cherry pie?
Apples should make Cider instead of Wine(it says they make cider in the description...) Cider has a lower alcohol content than wine, more like beer, so it should likewise process much faster but offer a slightly lower value.
Oranges should have a recipe for Orange Juice, a beverage which removes any current debuffs(vitamin c!)
