Switch Egg incubator missing from all big and deluxe coops

Hello!

I am having an issue where I'm not getting the incubator with the big and deluxe coop upgrades.

For context, I started this save file prior to the 1.6 update. As far as I know, the following occurred during the 1.5 update:
- Built a coop
- Unknowingly placed an item inside the coop where the incubator would go when upgrading
- Upgraded to big coop; item was still there in the incubator spot so I didn't notice the incubator was missing

The following occurred in the current v1.6.15 ver 3 update:
- Upgraded to the deluxe coop and still no incubator. I realized it was in the incubator spot and removed the item (first photo).
- Built a second coop, left it completely empty
- Upgraded to the big coop, it was missing the incubator again
- Upgraded it again to deluxe and it's still missing the incubator (2nd photo)

Is there anything that can be done other than trying to demolish all my coops, or worse, starting a new save file? I believe there's a way to modify the save file but I'm not willing to mod my switch to do that so hoping there's another solution.
