I know the dog and cat are more like the livestock than the townspeople, but having a bit of story for them and why they ended up at your farm would make the player bit more attached to them I think.
My second suggestion is that your kids grow up(to the age of Jaz and Vincent) and have a story as well. I understand the problem with making a cannon appearance for your kid when it's up to the player to make their character. I thought it'd be easier to make the kid look more like the other parent (your romance option) with some features babied down and have them act like Jaz and Vincent as far a routine goes. Their personalities and interests would be a mix of whatever your highest skill level was at the time and the other parent's personality. If the player is maxed out, the interest would be chosen at random.
TLDR: dog and cat quests/heart events would make the player more attached and having your kids walk around and have a personality would be super cute and also make the player more attached to their own kids.
