No, for the marriageable folk in town getting them to 8 hearts is the same as getting anyone else to 10 as far as the game is concerned when it comes to this sort of thing.

Ah, but you'll never get 100% completion of your heart that way. Leaving those other bachelor/ettes out of your dating pool by saving a mere 1100g on Bouquets means you miss their 10 heart events, though that does give you a reason to play the game another 11 times, so there's that silver lining.
But really there's a far greater satisfaction hiding in the wings here:
At 10 hearts with all datable squeezes, you've now broken up 6 de-facto couples,possibly hopefully even turning them against each other by simply being the superior choice in the Valley once they compare their previous interest to the Community Center repairing, local economy growing, slime vanquishing, golden tool slashing, master Farm redecorating, ship wrangling, cavern masonry-installing, occasionally Robin-jealously eyeballing, Sandy-simping uber-farmer.
Especially when you casually stroll into the Stardrop Saloon or the sisters' house.
