Wiki doesn't say gathering, slay monsters and fishing offer friendship. Does that mean these don't offer friendship?

The key verbiage is "X will be pleased." If the quest says that, it offers friendship. If it does not, then it does not. Not all of them do.

A little on a tangent but certain other quests will also reward friendship, such as the introductory quest giving 100 and each of the guaranteed mail fetch quests giving 250 (an entire heart)

gathering, slaying monsters, and fishing don't directly contribute to friendship points in the game. Friendship usually increases through more direct interactions like gifting, talking, or participating in events with NPCs.
