This is normal. Some crops, like radishes, spend multiple days in the seed stage. Radishes grow for 6 days and 2 of those days are spent in the seed stage. For you, those 2 days were day 19 and day 20.

Which is kind of odd

Seeds are supposed to grow immediately after the day you water it

Or am i missing something?

As long as it still is ready for harvest on the right day, then yea, it's just the icons for growth stages include an extra "seed-like" day.
If it actually longer than it should for harvest, then the low-hanging fruit explanation would be you somehow forgot to water them for one day in there. It happens to the best of us.

In real life, crops do often take multiple days or weeks to germinate. Crops spend multiple days in other growth stages with no indication of growth, so why is it so weird to spend multiple days in seed?

Well,alright

But i didnt know radishes actually do that

Referring to growth stages
Stardew’s quite realistic ways of crop growth taught me a lot too! Now the crops in real life aren’t exactly as shown as they are represented in Stardew but it is similar and thus makes it more realistic. It is a slow moving game in many ways just like farming in real life. There’s always something to do but you will always be waiting for something to grow or hatch or process or whatever.
