I'd go with barns. You can get eggs from a barn (eventually) but can't get milk from a coop, and since cheese is such a good source of health and energy I end up focusing on barns over coops in every playthrough. And goat cheese is a loved gift for a few of the townies I like being friends with, so that's factored into my thoughts as well. Sometimes I get a coop first, but the barns always end up being my priority.

Farmer Bobbi usually gets the Coop first because it's cheaper so it becomes affordable first. Chickens and Ducks are also way cheaper than Cows and Goats so building out your Coop costs way less
g. And to top it off, the Mayo Machine is available at Farming Level 2 so that fits.

The Barn and its animals cost more and the Cheese Press isn't available until Farming Level 6 which is pretty late for a seemingly basic useful machine. Of course the Barn and Press are essential to get :goldstar: Cheese for easier Skull Cavern runs but then Farmer Bobbi usually isn't introducing the hungry Flying Serpents to her apparently tasty knees before Farming 6, so taking more time to get the Barn and its upgrades is how it usually ends up happening.

I go coop because you can get everything but milk and truffles from a coop. Plus the coops are cheaper and rabbit's feet are awesome gifts for everyone but Penny. You can get a jug of milk for cooking every Saturday from Sandy and you can trade emeralds for cheese every Friday in the desert. Plus you can hatch eggs so you don't even need to buy the chickens or ducks if you get eggs from the Travelling Merchant.

Honestly it depends on how you play. If you prefer building up your infrastructure immediately then upgrading slowly you're probably better off with a coop just because it's cheap and easy to get started (and chickens provide a fair profit while consuming less grass).

If you're already midgame and you want max upgraded buildings for pigs/rabbits then it doesn't matter too much, I may even upgrade them in tandem as you can potentially save a day by making sure one of your building days overlaps with a tuesday robin would otherwise be out (you could also enter her house late and wait for her but I've never been able to remember the right time)
