can i still try to date a villager?

if a player is dating a villager but the villager still has the "single" status, can i still try to date this villager?

You mean like in multiplayer? E.g. if player Bob gives Abby a bouquet, can you still give her one too? If that's what you mean, then I believe so. It's not really locked in unless one of you marries them.

As the commentor above me said, in multiplayer two people can date the same person but only one can marry.

If you are talking about singleplayer, there are no npcs that date that can be dated. Anyone with “single” in their relations tab can be dated.
