I run SDV on a 2017 iMac with Ventura, so yes, you should be able to run SDV. The only caveat is that a number of us Mac users have experienced sporadic bouts of video stuttering. It will stutter for a while, quit for a while, then come back for a while, etc. It's annoying, but doesn't affect game play to any great extent. I have learned to mostly tune it out. This happens on Macs with Intel and also Apple M-series processors. We hope that Concerned Ape will address this issue in 1.6, he's had to fix the problem before.

MacBook Pro 2014 is still hanging in there with OS Big Sur! I’ve seen stuttering if the laptop is low on power or I’m using full screen on a separate monitor (changing to window solves that). I play on the laptop screen and if it’s plugged in it behaves.

Stardew Valley (in Compatibility mode, so no mods) even plays fine on my 2009 MacBook Pro though there is a bit lower performance because it's on the older side. Like 14 years older! A whole farm full of grass, otherwise knows as the lazy Animal Farmer's dream, causes some slowness but it's not bad, the game is still mega-fun.

The only caveat to older machines is that I haven't been able to get SDV of any kind to run on 2011 and 2012 Macs, something about the older Intel graphics drivers not being happy with SDV's v1.5.4 and later updates. PCs of the same age got a 2020 Windows driver update which fixes this and the older 2009 and 2010 Macs use Nvidia graphics which work OK in Compatibility mode.
