I am playing the game in Simplified Chinese (1.5.4, no mods), and it seems that whenever I give the horse a Chinese name (such as "狗"), the game crashes about 15 minutes later. I've gotten a crash about 6 times this way. It crashes some time after naming the horse regardless of what I am doing at the time of the crash. There aren't any error logs being generated in %appdata%/StardewValley.
Giving the horse a Chinese name after changing the game language to English still resulted in the same crash, but giving the horse an alphabetical name seems to have stopped the crash from occurring.
