I have the botanist profession and can find iridium-quality seaweed on the beach just fine, but the seaweed in The Mines while the Shrine of Challenge is active is normal quality. All other forageables are iridium-quality in both cases. I tested it just now again and got iridium-quality rainbow shell, iridium-quality clam, and normal-quality seaweed.
