Broke game with mods :(

Hello my girlfriend and I have put over 40 hours into our multiplayer server, we tried adding stardew extended and now we can not even load our farm. We have tried changing the _old save file and recovering but nothing is working. I would appreciate it so much if there is anyone who can point me in the right direction. She is very upset and I feel awful for showing her the mods now in the first place.

Did you ever figure out how to fix this? I have tried everything in the troubleshooting guide but no luck. According to the guide my save should be fine since the last text in my save file is /SaveGame: "If the last text in the file is “</SaveGame>”, then your save file is fully in-tact. Therefore the problem must be a corrupt SaveGameInfo file". But using a working SaveGameInfo file still causes the same issue. I tried using a savegame editor too to make a small change and hope it would save it correctly, but no luck. My other save file works fine. I also tried disabling all mods, including SMAPI and running the game vanilla, but that didn't help either. It even crashes on Geforce Now.
