I think Robin knows Farmer Bobbi better than we think and she understands that she's embarking on a journey to wreck local economies by flooding gallons of Wine into all the shops in neighboring towns. So Robin tries to curb that boozy abuse by leaving the Cellar in a state of usefulness but disarray.
But her efforts are all for naught as the somewhat unfinished Cellar imparts a certain earthy and fragrant undertone to the swaths of Starfruit and Ancient Fruit wines from the coincidentally appropriately named Winery of Bobbi Cooper. Experts and competitors are unable to discern what imparts these subtle but appreciable improvements though over time Robin begins to suspect it's not some ancient vintner's secret handed down from generation to generation that Bobbi found stashed between the floorboards.
It's just a messy cellar fulla dirt and fungus.

She made you the kegs and maybe the walls which look nice by the way. If you want a nice floor you must ask a tiler.
By the way, I always loved the shabby look and in some games I place a sofa, table and some deco there. I could live there if there was a small window.

Unfinished floor with fungi growing out of the exposed dirt below. That's the part that always bothers me. She saw that the cellar created perfect mold-growth conditions and didn't do anything to combat that. Poor Sebastian probably thinks he just has a smoker's cough when he's actually suffering the effects of the mold growth in his unventilated basement bedroom.

Okay, but like, if Robin ran out of time and materials to really finish fixing up Grandpa's old, dangerous cellar - I would happily pay whatever extra is required.
