Is there any way to transfer my stardew valley account/game save from my Xbox to Nintendo switch and if not normally then are there any developers that can help do it on their end

Sorry, I don't think there is any way to do that. It's not possible to transfer save files from/to a console.

Yeah unfortunately both of those consoles block any sending/receiving of files, or even accessing them in general, though you can of course keep two files at once and play either when you want.

You have to play on mobile or pc to have access to files and sending save files between and through the two platforms to play interchangeably
