Abigail's heart level is at 7, but I've only seen the 2-heart event. Will the other events be skipped?

No, they'll just trigger whenever you fulfill the other conditions for them. I rush getting Sam to three hearts in the first summer, but always forget to actually go to his house to trigger the two heart event until later in the year.
