1. How do I use the color grid to give my character dark brunette hair color, and gray-blue eye color?
2. Which bachelor is the least fussy about getting fish, shellfish, fish dishes, seafood dishes, pretty shells from the beach, and farm products such as crops, eggs, and milks as gifts?
3. Have any new bachelors yet been added to the original 6?
4. Does the game allow players to have both a cat and a dog?

My only advice for your first question is to fiddle with the colors. The default farmer is a brunette so that should be a good starting place for the hair color you’re looking for.

As, for your other questions, there are no new bachelors but you can have Krobus as a roommate. Still only 1 pet per farmer. Most of the bachelors like vegetables and tree fruit. Alex likes eggs but I believe eggs and milk are not loved by any bachelor. Uncooked Fish are generally not well received although Sebastian likes flounder and loves sashimi, Elliot loves lobster and crab cakes, and Alex loves salmon dinner. I never really give foraged shells as gifts to the bachelors but the wiki is your best source of gift giving info. The editors do a really good job.

To expand on Boo's answer for Beach product preferences: Universally, Fish are disliked. Clams, Rainbow Shells and Coral are Neutral (which means a minor positive to friendship) and Sea Urchins are hated. So that you know for general gift giving. Now, of the Bachelors, Harvey would be the worst option, because he Hates Coral and Rainbow Shells. Sam and Shane are stock standard in their fish preferences, which makes them pretty bad options. Alex Loves Salmon Dinner specifically. Elliott Loves Lobster and Crab Cakes, and Likes Octopus and Squids. The rest of the fish he's neutral to, which is better than disliking them. He's a pretty great option, but the very best imho is Sebastian. He Loves Sashimi, and any fish can be turned into Sashimi. He also Likes Flounder, and is Neutral to the rest of the fish.

There has been an addition to the bachelors although 'they' are a bit different to the other bachelors. You can't marry them but they can become your housemate which is basically the same thing anyway. All you have to do is unlock the sewers...

Well, not quite the same as you can't have kids with them. Kids really do nothing though, although I guess you need kids for that one Steam-only achievement.

Okay, if we're going to get all nitpicky...

There were originally only 5, same for bachelorettes. Then at 1.1 both Shane and Emily were added making 6 of each. Then in 1.4 the roommate option with our friend in the sewers was added. There have been no additions since.
