Switch 1.6 Switch Co-Op not working for local and online communications

My fiance and I are both playing on two different switches, both updated to 1.6 and each console is updated to the latest version. We have tried restarting the game, restarting our consoles, trying local communication without WiFi and online communication with WiFi and are kicked off after 2-3 days in game. We then lose our progress for the current day we are playing each time. Is there anything we can do? We already have around 20 hours into this farm and we would hate to lose it due to the bug

We're having the same problem, also on Switch playing online. 40+ hours on this co-op farm and can't find a solution anywhere :( There's no pattern to what we do in order to cause the kick. Always happens right around 12-2 pm.
