As someone in a similar position, basically everything and nothing
I don't really see the point of getting this insane amount of money. But I guess it's kinda satisfying to have enough money to buy like a hundred beers and chug them down at the saloon. Or have enough money to buy whatever you want and od whatever you want.

It's more of a challenge than anything else, for myself I just wanted to do something nobody had ever done before and as a byproduct I can do some random stuff like buy millions of lawn flamingoes.

It's utterly pointless but so is anything else, it's all just for fun

In addition to everything else, I've decided to collect all the items that "disappear" after their quest is over. This of course means that I won't be able to play on that farm for very long anymore, but I wouldn't anyway.

Here's the fruits of my labor on my last farm, new items I didn't have before, which makes me happy:

I wasn't even thinking about the unbroken Alien Capsule until it landed in my garden haha

The most fun part of the run was getting Perfect Catches on all the Legendary Fish, which was surprisingly challenging even with help from the Statue Of Blessings!

In addition, in 3 chests, I have all 81 "Fresh" Cooking Recipes, and all 81 "Fresh" Qi Seasoned Cooking Recipes!

Which means I once again get to start a new farm. I guess I'll just be going for:

Pirate Rug
Prismatic Jelly
Calico Egg
Wriggling Worm
some more Legendary Fish variants

Actually your eggs are worth only 1,410,065,408 gold due to integer overflow if you would sell them all, as Stardew Valley saves your balance in signed 32 bit integers.
